This is Baja Chipotle Sauce that I made last week. It’s a little bit different from classic Chipotle Sauce, delicious, easy to make, and perfect for spicy sauce lovers.

I always enjoyed the Chipotle Southwest Sauce at Subway, but suddenly they replaced it or maybe rebranded it with this Baja Chipotle Sauce. So, I decided to try making it, combining the taste of the original Chipotle Southwest with a touch of the new Baja Chipotle Sauce, since it’s a little bit sweeter than when it was called Chipotle Southwest.

So, I made this Copycat Baja Chipotle Sauce with a base of mayo, of course, adobo sauce, lime juice, and honey (if you want to make it sweeter). The taste is really amazing and perfect for adding to sandwiches and wraps.

What is Baja Chipotle Sauce?

Baja Chipotle Sauce is a sauce you can order and find at Subway. It’s made with a base of mayonnaise, adobo sauce, and lime juice. The sauce is a rebrand of the Chipotle Southwest that Subway had before, Subway made this Baja version sweeter than it was, which makes it perfect for some people, but still so good to add to sandwiches, wraps, or even use as a dip.

What to Eat with this Baja Chipotle Sauce?

Baja Chipotle Sauce is so versatile and pairs well with lots of meals. I love enjoying it with wraps, like my favorite Chicken and Avocado Burrito Wraps. It’s also fantastic on grilled chicken sandwiches and shrimp tacos, You can also try it with sweet potato fries or any veggies you like the most.

Ingredients

  • 1cup mayonnaise
  • 2 chipotle peppers in adobo sauce
  • 1tablespoon adobo sauce (from the chipotle peppers can)
  • 1tablespoon lime juice
  • 1teaspoon garlic powder
  • 1teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon salt (or to taste)
  • 1tablespoon honey (optional)
  • 2tablespoons sour cream (optional too)

How to Make Baja Chipotle Sauce?

Step 1:

First, Gather all your ingredients. If you have whole chipotle peppers, chop them up so they’re easier to blend.

Step 2:

Put mayo, chipotle peppers, adobo sauce, lime juice, garlic powder, smoked paprika, cumin, and salt in a blender. Blend until smooth and creamy. If you don’t like it too spicy, start with one pepper and add more if needed.

Step 3:

Try the sauce. If you want it sweeter, add honey. For more tang, add lime juice. Blend again to mix everything nicely.

Step 4:

Also, If you want the sauce to be even creamier, mix in sour cream after blending. Stir it well.

Step 5:

Put the sauce in a container and chill it in the fridge for 30 minutes. Enjoy.
